What’s a Wine Experience Like Without Personality? For our family, our love and camaraderie has always centered around the family meal, and wine pairings are an important part of that experience. Each of our children is spirited and unique. And so are the winemakers for whom we work. Take Alessandro Pascolo, for example. He developed his passion for winemaking from his father, Giuseppe, pictured above. And his pursuit of his dream, to produce world‐class wine, was inspired by confidence from his mom, Gabriella. The Pascolo Winery is truly a family affair, with hard work and support from his wife, Milena. No stuffiness, no pretense. Just good, honest, hard‐ working people. Who put their heart and soul in every bottle they make. As you try each of Alessandro’s wines, you will recognize one key ingredient: finesse. It’s what the guy is all about. Velvety bubbles in his sparkling wine; slate‐like minerality in his Pinot Bianco; smooth mouth‐feel in his Friulano; subtle chocolate truffle in the reserve Merlot. Improved vineyard management has allowed Allessandro’s personality to shine in each bottle. And, for us, it is that personality that makes Pascolo wines a worthwhile experience.

FEATURED THIS WEEK: RESERVE MERLOT. In the United States, Merlot took a pounding with the movie Sideways, and its selfless promotion of California Pinot Noir. Today, we still benefit from the affront, and as a result, world‐class Merlot remains under‐priced. In many regions of the world, this classic Bordeaux variety has replaced many indigenous grapes because of the value and depth of the wines made with Merlot. Thankfully, Alessandro was not persuaded by the Sideways snobs, and has increased his efforts to make one of Italy’s best Merlots. Alessandro describes his Merlot Selezione as his “most important” wine. And, frankly, its depth, and its mastery of the smooth but considerable tannins, has put Alessandro on the “watch list.”

2014 Pascolo Merlot Selezione:
De‐stemming and maceration for 12‐14 days. To extract tannins and flavors, in the first week, the cap is punched down in the must. In the second week of maceration, the must is pumped over the cap. Aging in French oak barrels for 18 months, blending and aging in steel tanks for 6 months. Bottling and aging in bottle for 12 months. This wine is mature now, and will age for many years to come.
With a deep ruby red color, the flavor is very intense and complex, with notes of cherry jam, chocolate, red currant, raspberry, licorice, truffle and tobacco. It has a soft and velvety mouthfeel, balanced freshness and clean tannins. It is full‐bodied with a long finish.
Serve with grilled meat, wild boar, aged cheese. We have a family skirt steak recipe that makes a perfect match with this wine. Happy to share it, if you like.
