Welcome, again, to the Jace Wines e‐blast. Hope this finds you safe and warm, and hopefully by now enjoying some of our Pascolo wines.

We’ve heard from many of you, and appreciate the repeat purchases – as several of you have realized that we may be on to something. We will be featuring the Rynnhof wines next month, and hope you enjoy the experiment with us. When you’re tired of flabby popcorn‐butter chardonnay, where do you turn?

While the whole world seems to love that buttery popcorn Chardonnay, Italians are just starting to warm up to it. And they are taking their time about it. Indeed, later this year we will introduce a truly special Chardonnay from Stefan Vaja of Glassier in Sudtirol, Italy. Italy is not without its own solid white substitutes, mind you – and in fact, there are two we like better than Chardonnay. One is Pinot Bianco, also known as Weissburgunder. Pinot Bianco is also a favorite in Czechoslovakia, where Chris’ mom’s family has its roots. And, interestingly, Pinot Bianco is a mutated child of Pinot Noir.

De-stemming and pressing.  Fermentation in steel tanks at 18°C (64°F).  Aging on the lees for 8 months (to develop creamy mouthfeel), aging in bottle for 4 months.
 
Color: brilliant straw yellow.  Intense flavor with notes of yellow plum, pippin apple, gala apple blossoms, creamy white peach, and bread.  Fresh and full-bodied, crisp, fruity mineral finish.
 
Serve with virtually any array of appetizers, shrimp dishes, pasta with shellfish, grilled seabass, seared scallops, soft shell crab; and vegetables.  Also pairs extremely well with Chicken with Forest Mushrooms and root vegetables (family recipe – again, let us know if you would like a copy).
